Is our beef organic?
Although our beef is not technically organic, I can tell you this, 4 years ago we did have our farm certified as organic. (Your farm must be certified organic if you think you might want to certify your beef organic.) When we did that, we up kept the organic certification for 2 years. It’s a lot of red tape and ultimately we dropped it because we were not seeing the benefit of going through the process and fees to maintain the certification.
Are our cattle vaccinated, injected with hormones, antibiotics, or the mRNA vaccine?
We do vaccinate minimally to keep our cattle healthy. We work closely with our veterinarian to only vaccinate for what is necessary in our area. Any animal of ours that gets sick and needs an antibiotic will be treated and pulled OUT of our beef program. Our cattle are never injected with hormones and we do not use the mRNA vaccine. Currently in the US, there is no approval for mRNA with any beef cattle.
Explain the bulk beef process.
We process our beef twice monthly to try to keep things running fluidly. How it works is: we take a deposit upfront, and deposits help us determine how many beef we drop off at a time. Once I receive a deposit, I allocate carcasses according to deposits. When you place your order, I will let you know the soonest available drop off date for processing. 1-2 days after drop off, I call to go over the cut sheet with you. This is your time to go over what cuts you want, how you want them packaged, and anything else you want out of your beef. The butcher will dry age the beef for 21-28 days. This is what enhances the taste AND nutrition of our beef. Please take that time in to account for getting your beef back. Final payment is based on hanging weight of your beef and I will reach out to you with the exact final payment amount, 2 weeks before shipping. That needs to be paid before we ship your beef.
Is our beef grass fed and grass finished?
Yes. Our cattle do not receive any corn or grains. The genetics of our herd were hand selected to finish and marble well on pasture. We regeneratively graze our cattle on our pastures and finish them on a seasonal high protein cover crop mix. (That being said, some people do prefer corn finished. If that is what you’re looking for please reach out to us. We do have neighbors we could work with.)
What is the difference between our 20lb. steak box and 30lb. beef box? Can we customize orders?
Aside from the weight of beef being delivered, the difference is in the contents. The 20lb. box is strictly steaks: ribeye, ny strip, t-bone, sirloin, filet. The 30lb. box includes those steak cuts in a portion of 8-10lbs., but also includes 8-10lbs. of roasts, and 8-10lbs. of ground beef. We can customize, within reason, to try to get you a little more of your favorites by swapping a few things around. After placing your order, Nikki will reach out with a personalized e-mail confirmation. Within this e-mail is where you can discuss customizing options.
Do we sell offals, beef fat, or tallow?
Yes, we do offer these items as add ons. Due to us covering shipping costs, and due to shipping prices, we need to keep these items as add ons to the beef and pork box orders.
