Secure your whole beef share with a $400 deposit. This reserves your beef in our upcoming harvest schedule and guarantees your place in our delivery rotation.

After harvest, your beef is dry-aged for 21-28 days to enhance flavor and tenderness. Choose your preferred cutting method:

Shipping Coverage

We ship products within the contiguous 48 states of The United States of America. However, there are some locations that we are unable to ship to. If you happen to be from one of those areas, we will contact you.

Shipment processing times

All orders are processed within 1-2 business days. Please watch for an order confirmation e-mail directly from Nikki with expected shipping dates. Orders are only shipped on Mondays to avoid shipping and delivery lag times on weekends. All products are shipped frozen, packed with dry ice. Please handle the dry ice with care.

Michael and I established Diamond H Ranch in central Missouri in 2019, but our story goes back much further. Michael has been raising cattle for 43 years, starting with his first bottle calf as a child. That lifetime of experience shows in every aspect of our operation.

Not All Grass-Finished Beef Is Created Equal

If you've tried grass-finished beef in the past and been disappointed, you're not alone. Here's what most people don't know: finishing cattle properly on grass is both an art and a science that few have mastered.

Modern Angus cattle have been selectively bred for generations to grow quickly when fed corn and grain. Their genetics simply aren't designed to develop properly on grass alone, which is why so much grass-finished beef ends up tough, gamey, or inconsistent.

At Diamond H Ranch, Michael has spent decades carefully selecting cattle with genetics that thrive on a grass-only diet. Our smaller-framed Black Angus cattle develop beautiful marbling and tenderness without ever needing grain. Additionally, Michael meticulously plans our pasture rotations and cover crop mixes to ensure the cattle receive optimal nutrition throughout the seasons.

The result? Exceptionally tender, flavorful beef that rivals or surpasses grain-finished beef in taste tests, while offering superior nutrition. It's the best of both worlds—delicious beef that's also better for your family.

Frequently Asked Questions

What's the difference between Nikki's and Michael's cut sheets?

Nikki's cut sheet includes traditional bone-in cuts like T-bones and bone-in roasts, which many prefer for enhanced flavor when cooking. Michael's cut sheet features boneless options like filet mignon and NY strips, offering more convenience and easier preparation.

Can I customize my cuts if I don't want one of the standard options?

Absolutely! While our standard cut sheets work well for most customers, we're happy to accommodate custom requests. Just let us know your preferences when we contact you about processing.

Is your beef organic?

Although our beef is not technically certified organic, we previously maintained organic certification for our farm for two years. We ultimately discontinued the certification due to the extensive paperwork and fees involved, but we continue to maintain the same high standards of production. Our cattle are raised on pastures that haven't been treated with synthetic chemicals, and we prioritize natural, sustainable practices throughout our operation.

Are your cattle vaccinated, injected with hormones, antibiotics, or the mRNA vaccine?

We do vaccinate minimally to keep our cattle healthy, working closely with our veterinarian to only administer what is necessary for our area. Any animal that requires antibiotic treatment is immediately removed from our beef program. Our cattle are never given hormones, and we do not use the mRNA vaccine. Currently in the US, there is no approval for mRNA vaccines with any beef cattle.

How does the bulk beef process work?

We process our beef twice monthly to maintain a steady flow. Here's how it works:

  1. You place a deposit to reserve your share (this helps us plan how many cattle to process)
  2. Once we receive your deposit, we allocate carcasses accordingly and inform you of the soonest available processing date
  3. 1-2 days after drop-off at the processor, we call to discuss your cut sheet preferences
  4. The beef dry-ages for 21-28 days, enhancing both flavor and nutrition
  5. We calculate the final payment based on hanging weight and contact you about two weeks before shipping
  6. After receiving final payment, we ship your beef directly to your door

Please account for the aging time when planning for delivery of your beef.

Is your beef truly grass-fed and grass-finished?

Yes, absolutely. Our cattle receive no corn or grains at any point in their lives. The genetics of our herd were specifically selected to finish and marble well on pasture alone. We regeneratively graze our cattle on our pastures and finish them on seasonal high-protein cover crop mixes that Michael has perfected over decades of experience.(That being said, if you prefer corn-finished beef, please reach out. We have neighbors we could potentially work with.)

Do you sell organ meats, beef fat, or tallow?

Yes, we offer these items as add-ons to beef and pork box orders. Due to shipping costs (which we cover), we need to keep these as add-ons rather than standalone products.

Delivery Information

How is my beef shipped?

Your beef is flash-frozen, carefully packaged with dry ice, and shipped via temperature-controlled vehicle directly to your doorstep. We only ship on Mondays to avoid weekend delays.

What if I'm not home for delivery?

Our shipping partners will attempt delivery when someone is present to receive the package. Please provide delivery instructions when placing your order, and we'll coordinate with you on the expected delivery date.

How much notice will I get before delivery?

We'll contact you approximately two weeks before your scheduled delivery with final payment details and to confirm your delivery address. You'll receive tracking information once your order ships.

What if something is damaged during shipping?

In the rare event that your package arrives damaged, please take photos of the packaging and contents, then contact us immediately. We'll work with you to resolve the issue promptly.
